Minted Lemon Chicken Soup (Serves 4) - Recipe by liverpoolg
Ingredients:
- 675g/1 ½ lb Chicken quarters
- 100g/4oz Chicken Giblets, chopped
- 1.1L/40fl.oz. Water
- 2 Onions, finely chopped
- 1 Stick of Celery , finely chopped
- Salt
- 2 Bay leaves
- 150g/+5oz Long Grain Rice
- 1 tbsp Lemon Juice
- 10 Mint leaves, finely chopped
- Freshly ground black pepper

Instructions:
1. Place the chicken portions in a large saucepan together with the giblets, water, onions, celery, salt and bay leaves. Bring to the boil then reduce the heat to very low, cover and simmer for 2 hours.
2. Remove the chicken from the pan and set aside.
3. Add the rice to the soup, stir well and continue to simmer for 10 minutes, stirring from time to time.
4. Meanwhile, remove the skin and bones from the chicken then cut the meat into small strips.
5. Add the chicken meat to the soup together with the lemon juice and continue to cook over a low heat for a further 15-20 minutes, until the rice is very soft.
6. To serve – sprinkle with the mint and serve immediately.


Fish Pinwheels (Serves 6) - Recipe by scotlassie
I would like to share my fish course recipe which has always been a successful course when I have used it in planned dinners. It is very easy to serve and can be prepared that morning or the night before.

Ingredients:
- 6 slices of filleted white fish (can be cod, haddock or local catch)
- Breadcrumbs from 3 slices of brown bread
- 3 garlic cloves
- 15oz of butter
- 12 cocktail sticks

Instructions:
Mash the butter, garlic and breadcrumbs into a paste.
Half the filleted fish down the centre, giving 2 long strips from each fish.
Spread the paste along the fish, roll into a pinwheel and secure with a cocktail stick.
Grill the fish (placed on kitchen foil) under a medium heat for 20 minutes, turning halfway through.
Pour any melted garlic butter from the foil over the fish when serving.
Can be served with a side salad for a delicious but light fish course.


Russian Borscht - Recipe by spitfire77
Ingredients:
- 1 small head cabbage--shredded - 1 large onion--chopped finely
- 3 cups cubed potatoes
- 2 cups carrots fresh diced or sliced or frozen
- 1 1/2 cups peas (frozen)
- 1 28 ounce can diced tomatoes
- 1-- 5.5 ounce tomato paste
- 1/4 cup butter or margarine
- dill to taste (optional)
- salt & pepper to taste
- 3 chicken oxo cubes or 3 heaping Tablespoons bulk or can chicken flavoring
- 8 cups water

Instructions:
In large skillet or Dutch oven put margarine, onion, cabbage. Sauté 10 minutes.
Add diced tomatoes with the juice to cabbage mixture, cover ,sauté 15 minutes. In large soup pot, put water & all the rest of the ingredients into pot & bring to boil. Turn down to simmer. Add the cabbage mixture. Simmer all until veggies cooked. You may have to add more water. It is a thick soup. You may need to add more chicken flavor to it also. This soup also needs to stand 24 hours after cooking. The flavors need to mingle with each other & tastes 100% better. You can also freeze it. Absolutely delicious!

This is a recipe for a dinner which is very popular at my family.


Basil-potatoes with pork chops (4 servings) - Recipe by toflo
Ingredients:
- 750 gram potatoes in slices
- 0,75 liters cream
- Lots of fresh basil, about 2 large handfuls, dry basil can be used.
- Salt and pepper
- 4 good pork chops

Instructions:
You put the potatoes in a fireproofed form, and then you mix the cream and spices together and pore it over the potatoes. Put it in the oven for about 45 minutes at 175 degrees Celsius.

Then you give the chops 1 minute on each side, and put them on top of the basil-potatoes, when they have about 20 minutes to go.

Served with bread and salad.


Barbecue-Style Pot Roast - Recipe by darjewel
Ingredients:
- Combine 1 pkg [38.5g] onion soup mix
- 3 onions sliced
- 1 cup [250ml] barbecue sauce
- 1 bottle beer and 1/2 cup [125ml] water

Instructions:
Pour over browned pot roast in pot and cook

Tastes great - My favorite!


Salmon Pie - Recipe by Merrijane
Ingredients:
- 2 small cans of salmon drained
- 2 cups mashed potatoes
- 2 frozen pie crust
- Mix salmon with the mashed potatoes
- 1/2 cup of diced onions

Instructions:
mix all together ,put in pie crust, and cover with another pie crust , a few slits on top to let air escape, cook at 400 for 45mins turn down after 10 .. Let stand for 10 min. Serve with MerriJaneLittle toss salad or veggies

Pasta with Turkey Slices - Recipe by mojojojo15
Ingredients:
- Turkey Slices
- Pasta
- Chopped onions
- Peppers
- Mushrooms
- Carrots
- Bolognaise sauce

Instructions:
fry in a wok for 5 minutes then fry turkey pieces for 20 minutes then mix with the vegetables add some bolognaise sauce with a bit of garlic granules for a further 20 minutes while frying put some pasta on to boil when ready put pasta on the plate and add the turkey, veg and sauce


Sweet Pepper Chicken (Serves 4) - Recipe by Lucky2Nite
Ingredients:
- 6 bone in chicken breast halves, skin removed
- 1 tbsp vegetable oil
- 2 cups sliced mushrooms
- 1 med. onion sliced
- 1 med green pepper diced
- 1 can of cream chicken soup undiluted
- 1 can of cream of mushroom soup.
- Hot cooked rice

Instructions:
In a large skillet, brown chicken in oil on both sides. Transfer to a 5 qt slow cooker. Top with mushrooms onion and peppers. Combine soups , pour over vegetables. Cover and cook on low for 4 -5 hours or until chicken juice runs clear. Serve with rice.
